When I say these are sharp, I mean slice through the sponge on accident while washing and wind up having a sleepover in the ER sharp! You could slice an atom with these things, they are the bomb! In all seriousness, these are incredibly high quality knives, the finish, wood handles, comfort, and balance of these are top tier. As with any knives of good quality though, do not run them in the dishwasher. Anyone who runs good knives or pots and pans through the dishwasher needs to have their kitchen confiscated.

The media could not be loaded. So good I cut myself. I’m going to still call that good. I think I just forgot what a sharp knife was like because I’ve been using dull knives for so long. Super good pricing, easy to grip on the handle, and easy to cut and clean with. Haven’t had it long enough to determine the rusting issues but I’m happy with the cutting and that’s all I care about for now.

Love love love this knife.I didn’t realize such an inexpensive kitchen utensil could be so high quality. I have used this thing to cut everything from beef, chicken, seafood, veggies, and more and it does it with ease. It feels super fancy too. One thing that I never considered was the angle of the knives in the holder. My current set of knives are set to about a 60-70 degree angle. The holder fits on the counter; under some cabinets. No problem pulling knives out. This new set, however, has the knives at about a 30-40 degree angle. The problem is that I can’t pull the knives out without running into the overhead cabinet. I have to grab the holder and either pull it out from under the cabinet or tilt the holder so that the knife will clear the cabinet. Again, this is an issue that I never, ever even thought about.

I have RA so I really need a good knife. So far this one has been great. I am always cutting up fruits and vegetables so it is definitely important to have a good knife. First off they call this a Japanese knife. It’s a Japanese STYLE knife. It arrived with a Made in China sticker. Having said that, the carbon steel blade is well sharpened. It’s a bit light for a chef’s knife but you can’t beat the price. Great value.

I chose this knife for the quality of the reviews and the price. So, 4 months in and it is already losing its edge. When I got it, I was very happy with the ease this new knife sliced through onions, celery, and bell peppers not to mention the paper thin tomato slicing that was going on. But, now I have noticed it is losing it’s edge. My 25 year old Japanese-steel knife would get sharpened on the stone about once a year, which it still does, along with the occasional steely before using, but this one is dulling faster than I expected. Don’t get me wrong, it is still a very good knife, I just thought it would hold an edge longer. Maybe if I hone it on the stone it might hold up better… we’ll see.

This blade is razor sharp and feels great in the hand. I like that it has a nice case to keep it in as well. I’ve used it everyday since I got it and man you don’t even have to put any force on it, in just glides right through anything with easy! I’m looking at getting one of their boning knives too after using this one. Also you cannot beat this price.

I was in the market for a brand new knife that wouldn’t break the bank. Something that I will used everyday, but not use it extensively. Just for basic cutting vegetables, slicing meat, etc.Here comes the imarku Japanese Chef Knife! It was affordable and VERY sharp coming out of the box. Don’t believe? Do the paper cut test where you just let it simply glide down a sheet of paper and cuts like butter.Now, I have used it almost every single day since I purchased this a few months ago and I have yet to sharpen it, but it is due for a small sharpen.Definitely get this knife if you’re in the market to get something affordable and works really well.

The media could not be loaded. This is not a bad Sashimi knife, but needs work. The video above shows it in action. The knife is not sharp out of the box as can be seen. It requires some effort to get it to cut.The metal is not your typical Japanese hard steel. It is softer, more like German/French steel though hardened a little more (un verified). So you will need to sharpen it more often and it will not keep an edge for as long.It is thick metal and can be sharpened easily.The wood to metal finishes are lacking of your typical quality Japanese knife. There is quite the noticeable mismatch between the joint that can easily be felt with the fingers. This is a bit distracting and also prone to getting bacterial in the joint when not well mated. The wood is smaller than the metal so fixing it after the fact is more difficult. If the wood was bigger, then simple sanding would get it flush and smooth. As it is, it is a lot of work to fix, not worth the effort and quite frankly disappointing. That last little attention to detail would make it a wonderful knife even if the steel was not hard like traditional Japanese steel.The finish shows machining marks, though they are light. This really is better than smooth as it won’t be as sticky, but is not as nice to look at or as functional as the higher end alternatives. It is not a mirror finish as stated due to the machining marks.But, this is a $70 knife and not a $300+ knife.I really would prefer the wood to be wider so at least I could finish the last parts of the process rather than it being smaller. But flush would be even better. Even the sellers pictures show that the metal is oversized compared to the wooden handle. If you can see it in a picture, you know you can feel it in the hand.As it is, it doesn’t stand up to my Japanese knives (not even close), but it is a lot cheaper and will do the job if you sharpen it yourself or get someone to.Which is another point. This is a Japanese style knife that uses Western style steel made in China. The literature refers to it as a Japanese knife. It is not. No part of this knife has come from Japan as far as I’m aware. So its incorrect to call it Japanese. So lets just call it a Sashimi knife with a single bevel.Typical Japanese Sashimi knives are over 60 on the Rockford scale. They are high carbon while this is stainless (though they call it high carbon, but it is not).The difference is how sharp one can get an edge. High carbon will give you a very sharp edge, which is what this style of knife is famous for. With that however comes rust/high maintenance, which is something stainless steel is famous for avoiding. So pick your poison. If you want to have a super sharp sashimi knife, this is not it. However, this knife also will not require the level of maintenance those knives need and won’t be prone to rusting.If only that wood was flush…

I’ve owned this knife since late January 2021, and am currently reviewing it in late May 2023. I am giving it five stars based on my limited experience with specialty cutting knives, so please take that into consideration. I’m sure somebody more versed in culinary hardware could give deeper insight and make stronger relative assessments.I don’t know much about cutting knives, but in my experience this has been one of the best ones I’ve used. I maintain good care of it, washing and drying it by hand after I’ve finished using it and storing it in the container it came in, and only use it to cut on top of cutting boards (I have a birch and acacia cutting board, in case that’s relevant). It’s still got a sharp edge, cuts through things extremely easily (I primarily use it to cut vegetables such as broccoli, carrots, cabbage, etc. and meats like pork chops or chicken thighs), and has shown extremely little signs of any wear on a cosmetic or functional level.Sometimes cutting meat is a bit unwieldy, though I don’t know if that’s the knife, my technique, or the nature of cutting raw meat. It might wibble and wobble around a bit while cutting, but I have a very hard time imagining a knife that is so weighty and sharp (at this price point) that it circumvents that issue. Again, it might also just come down to my technique.I can’t compare this to any other knife in its price range unfortunately. I will say though, I have no complaints about the price I paid and I am very happy with the product and using it regularly. I would recommend this to anybody I know looking for a dedicated cutting knife, with the stipulation that they take care of it well. I’m not sure how well it holds up without routine maintenance, but I’m not going to compromise the livelihood of my product to find out either.

Honestly, just a great go-to knife. Reliable, inexpensive, holds an edge well, and sharpens with relative ease.I’ve been using mine (or it’s replacements) nearly daily for almost 6 years.(I don’t bother putting it away. It stays out with a cutting board ready for a moments notice) It started out as a gift from a friend, and I’ve come to order or replace over half a dozen of these as gifts to friends and family (I have casually left a few behind as gifts during traveling. And yes, I bring my knives on vacation when possible) and everyone has sung it’s virtues back to me.It’s light, comfortable to handle, and a joy to work with. (My favorite is the lack of heel/bolster for quick back of knife slicing)I have several expensive knives that cost several hundred dollars each from WillSonom types to handmade Damascus. Those are mostly purpose built and come out for specific tasksThis is my daily. I’m not afraid to abuse it, and it doesn’t mind being abused. It’s held up to my tasks and WITH REGULAR MAINTENANCE(honing) and occasional SHARPENING (either with whetstone or lazy/makeshift back of ceramic mug), the thing has been a trooper.Most any knife can come sharp out of the box, but I can say from experience that this one does hold up (with minor effort) over time.

I’ve been using the knife for about 3 weeks now and I’m really enjoying it, it’s very sharp our of the box. I’ve personally never used a knife that was so sharp other than a new box cutter. The handle is quite comfortable with a very appealing and strong finish. I’m not going to be puting it through my dishwasher but I’m sure it would hold up well in one.Ive used cutcos cheff knife for the last 10 years. And I can’t believe that brand still to this day insists on using those horribly shapped slippery plastic handles. The weight of the knife is much lighter also. Comparing this knife to a cutco doesn’t even seem fair.

Sharp as heck. Great knife, but honestly pretty niche uses after a few months with it. Lots of stuff like onion, potato, squash, etc, it’s hard to use with those things because it sticks to the knife due to air pressure since air cannot get between the knife and the food. (though, this phenomenon is wonderful for making uniform sized cuts since you bring the last cut with you when you position for the next cut)How do you fix that? I’m not sure, probably by simply having a thinner, shallower blade, and maybe some grooves or flutes as I think they’re called.it’s great for meat and sushi and stuff. but I wish I bought a nice cleaver that I could whack away with.

There is a bend where blade meets the handle. I have been using this just over a month and hadn’t noticed the bend until today. Until today I hadn’t been slicing anything that was long so didn’t notice it. When slicing chicken into strips I noticed it wasn’t slicing cleanly through but tended to push the slice toward the left (it has a bend toward the left). It isn’t a large bend, just slight but enough to see when holding the knife vertically in front of me. No where in the description does it say it’s a full tang that I could find so my thought is it’s a partial tang with handle attached with epoxy and the blade and handle wasn’t aligned when attaching the handle. It is annoying that I have to hold the knife slightly at an angle to make a clean straight cut instead of the blade dragging sideways through what I’m slicing. I have always washed it by hand right after using and dried it and stored it in it’s box.Other then that it is a nice knife. Light weight and very sharp. Much sharper then my other knives I got 20 years ago from “but wait there’s more” commercials but at least those are straight.I took 1 star off because of the bend but it does cut better then my old knives.
